Seafood Gratin - pieces of salmon and cod with pink prawns in a cream sauce, gratinated under the grill

Pan fried fillet of Scottish salmon with tiger prawns and a grain mustard and honey sauce

Roast breasts of Teesdale pheasant with bacon and mushrooms in a Drambuie cream sauce

Slow roast shank of Teesdale lamb with a rosemary and thyme gravy

Rustic Winter Game Casserole with mash

Crisp, hot confit of duck leg, served on a bed of Savoy cabbage and bacon lardons, with black cherry jus

Roast breast of chicken, stuffed with Mozzarella and sun dried tomatos, served with a herb cream sauce

Chargrilled 8oz Rump steak with homemade onion rings, salad and handcut chips.
